Spaghetti and meat sauce – yum!

Tonight I’m making my home made tomato meat sauce and spaghetti for dinner. Yummy!

Ok it’s not totally home made … what I do is combine a canned of stewed tomatoes and a jar of tasty tomato sauce, a pinch or two of Italian seasoning, plus some extra Thyme and Basil, some ground pepper, and my “secret ingredient” two tbsp of brown sugar.

Then I fry up about a pound of lean or extra lean hamburger and once it’s cooked I add it to the sauce mixture and let it simmer for an hour or more on low heat. I almost never use regular ground beef as it’s too greasy … plus if I did I’d have to use something like Fastin to keep the weight off! LOL

Once the sauce is almost done I measure out enough spaghetti for my husband and I (with a small helping for our dog!) and cook that for the required amount of time – usually between 8 and 11 minutes depend upon what brand of spaghetti I’m using or what kind (ie whole wheat versus regular).

Once the Spaghetti is done I toss it in a tiny bit of olive oil, serve it in bowls or on plates and then top it with some of the delicious sauce. I think most people mix the sauce and spaghetti or toss them together, but I just like the sauce on top and I mix it as I eat my meal.

Since there’s only two of us, the meat sauce mixture makes enough for about 8 meals … so I often freeze half of the sauce to use a week or so later and then we eat Spaghetti for two days or so with the sauce I didn’t freeze.

I like making big batches of food – It’s not easy cooking for two, and since I don’t feel all that well quite a bit of the time it’s nice to have food that’s already cooked that we can just thaw or heat up easily … or rather that my husband can heat up if I’m really feeling bad. LOL

Ugh – Fast food for dinner

I was so tired tonight that I didn’t cook dinner. Actually I fell asleep for two hours and didn’t wake up until my husband came home from work!

By that time it was 8 pm and a little late to start cooking. So we had McDonalds for dinner. We don’t have that often. It’s rare. But I always feel guilty after eating such a high calorie meal! Where’s some Medifast coupons when you need them!

Oh and the salt! Did you know that Canadian fast food apparently has even more salt in it than American fast food? Why? I don’t know … but it’s sickeningly salty.

Do you ever feel guilty after eating a fast food meal?

My neighborhood smells like cookie dough

Every night when I take our dog outside for her final outing of the evening, usually around 11:30 pm, the air has a sweet scent. Almost sickeningly sweet.

I think I figured out what the smell is. We have a Peek Freans factory not too far away … maybe a few miles, and they must be cooking up batches of cookies or other PK products at that time of night.

I guess it could be worse … I could be smelling industrial products or something! Luckily it’s just a nice, if somewhat overpowering, sweet cookie dough smell. LOL

Do you live near a factory? If so, do you ever smell whatever they are making?

One good thing about living near a cookie factory is that they have an outlet store. We haven’t gone there for a few years, but when we last went there we bought BAGS of stuff … like enough cookies and chips and other items to last for months! It has amazing prices … 50% or more off cookies and other items. Hmmm maybe we should make another trip to the factory?

When we have gone on a shopping spree at the Peek Freans outlet store we don’t just get stuff for us … we give some of what we’ve bought to friends or family or I used to take some of the cookies to work for the other nurses and doctors to enjoy.

Stuffed after a great Thanks Giving Dinner

OMG I’m stuffed! I can barely move after eating a very filling and delicious Thanks Giving dinner.

Yes it’s Thanks Giving weekend here in Canada and it’s one of my favorite holidays. Hey .. any holiday where you get to eat turkey is a great one isn’t it? Yum!

Since it was just Chris and I for Thanks Giving dinner this evening I decided to cook a turkey breast rather than a whole turkey. While the turkey breast was roasting in the oven I made:

  • Mashed potatoes – I always add a tablespoon of Herb and Garlic Philadelphia cream cheese to the mashed potatoes as it makes them delicious.
  • Peas
  • Stuffing – I cheat and use Stove Top Stuffing. Hey it’s good!
  • Cranberry Jelly – another cheat, I used canned.

The only thing we didn’t have was dessert. I haven’t been feeling all that well lately so I certainly wasn’t up to making a pie from scratch and I forgot to add a Pumpkin pie (and light whipped cream) to the grocery list. So no pie – no dessert. Oh well, at least that saves me from having to look up thebest weight loss pill after this meal … or does it! I sure am stuffed and I feel like I gained five pounds!

Nah! There’s no way I ate five pounds of food! It sure feels like it though!

I hope that all of my fellow Canadian visitors had a great Thanks Giving weekend and a great meal to top it off too! My U.S. friends will have to wait a few more weeks for their turkey!

Trying to decide what to have for a late dinner

Chris and I went to an afternoon concert today. No it wasn’t a concert in the park … it was in a legion hall. LOL Now that was different.

The bands were really good, but I felt sorry for one of the lead singers. You could tell that he’d had really severe acne as a kid and his cheeks were pock-marked as a result. I always feel bad for people who’s faces are scarred like that when there are so many good treatments available to treat severe acne these days.

Anyway … now we’re going to have a late dinner. I’m trying to decide whether I should cook something or if we should continue to treat ourselves and order something out? Maybe Chinese food? I’ve kind of had a craving for Asian food lately.

What would you do if it was already 9 in the evening? Make dinner or order out?
