Liked the first turkey so much I’m cooking another

January 3, 2011 by Tricia

My house is filled with the smell of a roasting turkey. Yep … I’m cooking the first turkey of the new year.

Yeah … I’m cooking again! I cooked a turkey just before Christmas – on December 23rd – I called it my Festivus Turkey and now I guess this is my “after” New Year turkey.

The truth is … we actually enjoy eating turkey (I brined this one so it should be extremely moist) and I bought the turkey at a good price (15 pounder for about 12 bucks) and since my husband was on temporary lay off from work for the last two weeks of December we’re on a tight budget. Eating two turkeys for three or four weeks is fine with us if it saves us money … and hey … turkey is good for you, isn’t it?

Now if that darn new internal thermometer alarm would stop going off early I could get some work done. I’m trying to install an update for my scanner software but the thermometer that I put in the turkey leg keeps going off … even though the turkey hasn’t been in the oven long enough (well it probably has now, but when it was only in the oven for 30 minutes I new that was too soon!).

Do you ever eat turkey when it’s not a holiday meal? I mean like us – in January?

It’s been ages since I made a cake

December 8, 2010 by Tricia

I was just saying on my main blog how I’ve been on a baking spree lately.

I haven’t really baked deserts in ages. I used to make lots of breads, and pastries but I haven’t done anything like that for at least five years and it’s been ages since I made a cake. So it came as quite a surprise this past Sunday when I found myself making a Chocolate Zucchini Bundt cake!

It turned out fantastic. I actually don’t think I’ve made a cake since i was in my teens! I turned it out on a plate and glazed it .. man it looked and tasted fantastic. I should have gotten out one of digital cameras to take a picture but by the time I was glazing it it was about midnight … and I was so tired!

My husband and I tried the cake after dinner on Monday night and this evening. I think i should cut it in half and freeze the rest … honestly … we shouldn’t be eating cake every night- even if it’s just a thin slice.

Waiting for our dinner to be delivered

October 15, 2010 by Tricia

My husband and I are treating ourselves tonight.

We’ve been on a very tight budget since we got a new car in August. Finally … things are looking a “little” better. Not great, but we have a little breathing room.

So we’re doing something we having done in months – we’re ordering food in for dinner. Swiss Chalet. Mmmmm. I can’t wait until the delivery guy gets here with our chicken dinners.

The last time we ordered in from this restaurant the guy had something that looked like a barcode scanner that he used on our debit card. It was kind of cool. We’re paying cash this time though so I probably won’t see that gadget this evening.

Do you eat out, get take out or get food delivered to your home very often? If so, how often?

Looking forward to the Beach Rib Fest

June 17, 2010 by Tricia

It looks like the summer event season has started here in in Toronto.

Last weekend we took our dog down to Woofstock – the largest festival for dogs in North America. We had a lot of fun – but of course our dog, Midnight, had a ball. We went on Saturday and walked around looking at all the booths and meeting other dogs and dog owners for several hours. Midnight was wiped by the time we got home and she slept a good part of Sunday as well. Nothing like a tired Lab every once in a while. Maybe we’ll take her to Winter Woofstock in November.

This weekend we have the Beach Rib Fest to attend. It starts tomorrow afternoon and runs through until Sunday 8 pm.

I love ribs. Mmmmmm. There are going to be several award winning rib vendors, a beer tent and live bands. It should be fun.

We went last year on the last day and they didn’t have any more ribs left. Sigh … so we tried pulled pork. I don’t think that I’ve ever had it before and I didn’t like it all that much … so this year we’d better get some ribs.

If it’s anything like the other ribfests that we went to last year the ribs will be tasty but kind of expensive. I’ve heard the best way to sample ribs at a ribfest is to only buy a half rack from a vendor and maybe get another half rack at another vendor. If my husband does the same thing at different rib vendors we can end up trying out four different rib places. Oh and have very full tummies. Hmm … maybe I’d better dust off my fitness equipment and do a round on the elliptical after coming home from the ribfest. LOL

Last weekend we drove buy one of the Luminato events, but didn’t attend. Perhaps we’ll go to Luminato this weekend as well. We can catch a performance or see some musicians.

I wonder what’s happening in Toronto next weekend … I’d better look it up. Going to local free or cheap events is a great way to have some summer fun.

Slow Cooker Beef Stew

February 18, 2010 by Tricia

I’m making stew for dinner tonight. I haven’t made stew in oh … a decade or more! LOL

My mother used to make stew for dinner regularly and everyone loved it except for me. I always hated stew. Oh it was always a little better the next day, but I still didn’t like it very much. For some reason though, my mom could get me to eat canned stew (Puritan Irish stew). I thought it was great.

I think my taste buds have evolved in the last while – or at least I’m hoping that they have because it seems like I’ll eat dishes and foods that I wouldn’t touch when I was a kid or young adult.

Anyway … I’ve been using our slow cooker quite a bit this year. I’ve made at least three slow cooled roasts and I even made barbecued back ribs once. Now I’m trying a tasty sounding stew recipe that I found on the Canadian living website.

I’m throwing in lots of root vegetables – a small store near us has veggies that are always fresh in fact they’re way fresher than the ones we get in the grocery store!

Here’s the recipe that I’m trying out this evening:

Slow-Cooker Hearty Beef Stew

  • 1-1/2 lb (750 g) stew beef
  • 1 tbsp (15 mL) vegetable oil
  • 1 can (28 oz/796 mL) tomatoes
  • 2 onions, cut in wedges
  • 2 cups (500 mL) chopped peeled sweet_potatoes
  • 2 potatoes, peeled and chopped
  • 2 stalks celery, chopped
  • 2 bay leaves
  • 1-1/2 tsp (7 mL) italian herb seasoning
  • 2-1/2 cups (625 mL) beef stock
  • 1 cup (250 mL) frozen peas
  • 1/4 tsp (1 mL) each salt and pepper
  • 1/2 cup (125 mL) all-purpose flour

Trim and cut beef into 1-inch (2.5 cm) cubes. In large skillet, heat oil over medium-high heat; brown beef in batches. Transfer to plate.

In 18- to 24-cup (4.5 to 6 L) slow-cooker, crush tomatoes with potato masher. Add onions, sweet potatoes, potatoes, celery, bay leaves, herb seasoning and beef; pour in 2 cups (500 mL) of the stock. Cover and cook on Low for 10 to 12 hours or until beef and vegetables are tender.

Add peas, salt and pepper. Whisk flour with remaining stock, stir into stew. Cook, covered, for 15 minutes or until thickened. Discard bay leaves.

** I also added about a cup of red wine, four carrots and 6 garlic cloves and I’m cooking this recipe on high in the slow cooker instead of low. **

Hopefully this stew tastes fantastic. I was drawn to this recipe because it had sweet potatoes in it. I don’t think I’ve ever had a stew with sweet potatoes in it and I love them … so it should be good.

I’m making white rice as well. We’ll probably serve the stew on top of the rice.

Do you ever make beef stew and or use a slow cooker to prepare meals for your family? If you do use a slow cooker what are your favorite recipes?
